About five years ago a friend gave me a loaf of banana nut bread and it was the best I’d ever had. I begged her for the recipe and was pleasantly surprised when a few days later she mailed it to me.
I’ve been making it every year since for different occasions…new babies, teacher gifts, sick relatives…you name it.
A couple of years ago at this time I was at Garden Ridge and found these awesome ceramic loaf pans (for $3.99 each!) and instantly thought WHAT A GREAT IDEA FOR CHRISTMAS GIFTS!
So I thought I would show you exactly how to make the yummylicious bread. Step by step. You know, so you can give it to YOUR friends, and neighbors, and teachers. I mean, who doesn’t love banana nut bread!
4 large eggs
1 (18.25 ounce) box yellow cake mix (without pudding)
1 (3.4 ounce) package of banana flavored instant pudding mix
1 cup water
¼ cup vegetable oil
3 ripe bananas, mashed
½ cup chopped walnuts
½ cup chopped pecans
First, beat the eggs in a bowl with an electric mixer until the eggs are thick and pale.

Next, add the cake mix, the pudding mix, the water, and oil, and stir until blended.

Mash the bananas in a separate bowl, and then add to the batter.

Add the walnuts and pecans.
Mix well and pour batter into two (YES TWO! This recipe makes TWO loaves. How great is that!) greased loaf pans. Put into a 350F degree oven for about one hour.

Oh yeah. One crucial point I forgot to make. Make sure you leave enough batter in the bowl so you can test it. This part is VERY important.

Once the loaves are done and out of the oven, let them cool on a wire rack for at least half an hour.
Clean the pans and then wrap each loaf in wax paper first (so it doesn’t stick) and then cover it in colorful plastic wrap. Put the loaves back in the pans and tie with ribbon or raffia.
Voila! The perfect teacher, neighbor, party gift!
